1 medium organic apple, chopped
1/4 c. raisins
2 T. coconut flakes
1 c. raw red cabbage, sliced or chopped
Dressing (Optional):
2 T. organic peanut or almond butter
2 T. Balsamic vinegar
Chop all ingredients and add coconut flakes. Stir in peanut butter and vinegar and mix well. This is a great side dish or topper to hummus- the sweet and spicy flavors contrast well.
