They're out there again.

You see them in front of groceries. In the entry of your church's fishfry. They even knock on your door.

Small and green and carrying brightly colored boxes.



Yes, it's Girl Scout cookie time!

Before you go any further, I want to say, "Buy some Girl Scout Cookies!"

They're good, cheap and the money goes to a good cause.

But when the last Samoa is gone and and the thin mints are no more until next year...

Here's a few copycat recipes

I found this first one on Recipe Zaar. It claims that this is the "Original" Girl Scout cookie recipe. I have no way to prove or disprove this but I thought it was interesting and it looks pretty good.

Original Girl Scout Cookies

This recipe was used by the Girl Scouts of Philadelphia in the early 1930’s who baked their own cookies to be sold at the first cookie sale. Girl Scouts in Uniform were seen in the window of the Philadelphia Gas Company preparing these cookies for baking.

Recipe by: Babybuttons

Ingredients

1 cup Butter
1 teaspoon Vanilla
1 cup Sugar
4 cups Flour
2 Eggs
2 teaspoons Baking Powder
1 tablespoon Milk
1/2 teaspoon Salt

Directions
1. Cream butter and sugar.
2. Add eggs, milk, vanilla and flour which have been sifted together with the baking powder and salt.
3. Mix well.
4. Roll out fairly thin and cut with cookie cutters.
5. Bake at 350ยบ for 6-8 minutes.
6. Sprinkle with sugar which is optional.

Now for the modern varieties.

Samoa are my favorite. There is just something about the chew caramel and chocolate that I can't resist. I know that I am not alone in this. Here is a good and fairly easy to make copycat that uses store bought shortbread cookies.

Girl Scout Samoa Cookies

Ingredients
24-30 shortbread cookies
6 tablespoons butter
1/2 cup granulated sugar
1/2 cup light corn syrup
1/2 cup sweetened condensed milk
1/2 teaspoon vanilla
4 cups toasted coconut
1 cup chocolate chips

Directions
1. Place each shortbread cookie in cup of a greased muffin tin.
2. In 2-quart saucepan over medium-low heat, combine butter, sugar and corn syrup.
3. Heat to a full boil, stirring constantly with a wooden spoon.
4. Boil 3 minutes, stirring constantly.
5. Slowly pour in sweetened condensed milk, stirring constantly.
6. Continue cooking over low heat until candy thermometer reaches 220-228 degrees.
7. Remove from heat.
8. Stir in vanilla.
9. Beat until creamy.
10. Immediately stir in toasted coconut and mix well.
11. Spoon mixture by teaspoonfuls over shortbread cookies.
12. Cool completely.
13. Remove cooled cookies from muffin tin onto waxed paper.
14. Melt chocolate chips and drizzle thinly in stripes over cookies and let chocolate harden at room temperature.
15. Store in airtight container.

I hope to continue The Best Copycat Restaurant Recipes Blog for many years. But I doubt I will ever come across a copycat recipe easier than this.

And they're actually really good.


Girl Scout Chocolate Mint Cookies

Ingredients

2 cups Mint Chocolate Chips
70 Ritz or Townhouse Crackers

Directions

1. Melt the mint chocolate chips in the microwave.
2. Dip crackers, one at a time, into the chocolate.
3. Lay on wax paper to set.
4. Store in airtight container (if there's any left, that is).
