1 egg
pinch salt
2 Tbs milk
2 oz butter
1/4 cup sugar
1 cup self raising flour
1/2 cup canned well drained shredded pineapple
For The Topping:
1 tsp sugar
1/4 tsp cinnamon
1 tsp butter melted
Method :
- In a large bowl add butter and sugar then cream them gradually adding the well beaten egg. Sift flour with salt and add the creamed mixture alternately with the milk.
- Spread half the mixture in a well greased 7 inch sandwich tin and cover with the well drained pineapple.
- Top with the remainder of the cake mixture.
- Bake the Hawaiian Tea Cake in a moderate oven 350 degrees for 25 to 30 minutes.
- Turn out carefully onto a wire cooler and while still hot brush with the melted butter and sprinkle with a mixture of sugar and cinnamon.
