500g tapioca
1 litre water
100g sugar
2 pandan leaves
100 palm sugar (gula melake)
Ingredients for coconut sauce:
400ml thick coconut milk
100ml water
2 tbsp sifted rice flour
1/2 tsp salt
Method:
- Peel tapioca, cut into chunks and soak in water for 1 hour. Set aside.
- Bring 1 litre water to a boil. Add tapioca chunks and pandan leaves and boil till tapioca is soft. Add sugar and palm sugar, stirring over low heat till mixture becomes syrupy. Set aside tapioca pieces and allow to cool.
- Combine all Coconut suace ingredients and bring to a boil. Drizzle over tapioca. Serve.
