Ingredients:
- 6 pork chops
- 3 tbsp. shallots, finely diced
- 4 tbsp. olive oil
- 2 tbsp. garlic, minced
- 3 tablespoons hot bean paste
- 1/2 tsp. ground cumin
- 1 cup orange juice
- 3 tbsp rice wine
- black pepper
- Salt to taste
- Sauté shallots in oil for 2 minutes (use medium pan).
- Add the garlic and sauté 1 more minute.
- Add the hot bean paste, cumin, orange juice, rice wine, pepper and salt to taste.
- Bring to a boil.
- Remove from heat and chill.
- Place pork chops in a large resealable plastic bag; pour chilled the BBQ pork marinade over chops and marinate in the refrigerator for 4-5 hours, turning occasionally to distribute marinade.
- Remove pork chops from marinade, reserving marinade.
- Pour reserved marinade into a small saucepan and bring to a boil. Boil one minute then remove from heat.
- Place pork chops in center of cooking grate. Grill for 15 - 20 minutes or until juices run clear, turning once halfway through grilling time and occasionally basting with marinade.
- Barbecued pork chops can be Served with black beans and rice (if desired).
