Ingredients:
- 6 pork chops (Makes 6 servings)
- 1/3 cup lime juice
- 1/4 cup olive oil
- 2 to 3 tbsp. honey
- 1 tbsp. Dijon mustard
- 1 tsp. grated lemon peel
- 2 tsp. finely chopped fresh garlic
- 1/2 tsp cumin
- 1/4 tsp. cayenne pepper
- 1 tsp. ground pepper
- salt to taste
- Mix all ingredients in a bowl.
- Place pork chops in a pan.
- Pour marinade over pork chops. Seal tightly and marinate for one hour. Remove pork chops from marinade and reserve remaining marinade.
- Place pork chops on grill, basting with marinade occasionally, for about 20 minutes or until meat thermometer reaches 160°F.
- Let stand 10 minutes.
- In saucepan, cook the remaining marinade over medium heat until mixture comes to a full boil (about 3 minutes).
- Serve pork chops with marinade on top or on the side.
