Starter:
50g sifted plain flour
50ml water
1 tsp dry yeast
Batter:
200g sifted plain flour
2 tsp double action baking powder
200g sweet potato. peeled, cut into pieces, steamed
120ml coconut milk
40ml water
140g brown sugar
1 egg
Method:
Starter:
Mix all starter ingredients and set aside for 1/2 hour to proof.
Batter:
Sift plain flour together with double-action baking powder. Put steamed sweet potato, coconut milk, water, brown sugar and egg in mixer and mix well. Remove from mixer, fold in plain flour, baking powder and starter by hand till well blended.
Line aluminum cups with paper cups. Pout batter into cups till 90% full and set aside for 15 minutes to proof. Put cups into steamer and steam over high heat for 15 minutes.
