Teriyaki Marinade Recipe

Teriyaki sauces and marinades are popular flavorings for foods, and easy to make at home, so there's no reason to buy a prepared mix. You can use this marinade/sauce in many different ways.

Ingredients:
  • 1 cup soy sauce
  • 1/2 cup packed brown sugar
  • 1/4 cup rice wine or semi-dry sherry
  • 2 tablespoons minced garlic
  • 3 tablespoons or so chopped green onion
  • 3 tablespoons minced fresh ginger
  • 2 teaspoons Asian 5-spice powder
Preparation:
  • Place all ingredients in a small saucepan and heat on low heat until the sugar is completely dissolved. Let cool.
  • Use as a marinade for chicken and shrimp; it's especially tasty. The marinade also works well with beef, pork and vegetables. Marinate food - covered and in the refrigerator - for up to 4 hours (shrimp for only about 30 minutes).
  • Use as a glaze for grilled foods: Set aside about 1/3 of the mixture before using the remainder as a marinade. Simmer about 5 minutes to reduce. Brush on grilled food when it's almost done cooking.
Makes about 1 1/2 cups.
