Lemon Cajun Flounder

This recipe is so basic I hesitated to post it, but what the heck right? It is such a quick, easy and tasty way to prepare flounder fillets when I'm not in the mood for frying or stuffing them. The flavors go great with this fish. These little fillets pack a hot, spicy, lemony punch and pairs well with plain rice and steamed veggies. This recipe is pretty much fail-proof. I never measure the spices, just coat the fish well and it all seems to work out. I throw this meal together when I'm in a rush and need something that looks nice. Simple, yet delicious. Can't beat that.


Lemon Cajun Flounder
Ingredients
  • 4 thin flounder fillets
  • 1 lemon
  • Cajun seasoning
  • Old Bay Seasoning
  • Onion powder
Step 1.) Wash & Pat dry 4 flounder fillets and place on foil lined baking sheet




Step 2.) Squeeze the juice of half a lemon over fillets



Step 3.) Sprinkle top of fish generously with Cajun Seasoning, Old Bay Seasoning and Onion powder (as you can see I am not shy when it comes to my seasonings : )




Step 4.) Cover and let sit in the refrigerator for about 30 minutes



Step 5.) Melt 4 Tablespoons of butter in the microwave




Step 6.) Drizzle butter over fish





Step 7.) *optional*Cut lemon into thin slices and place over fish



Step 8.) Broil on high for about 5 minute (the broil time depends on the thickness of your fillets so keep an eye on it. Fish is ready when it flakes easily with a fork)
