Spicy Caribbean Honey Baked Salmon

A good, crowd pleasing baked salmon recipe is so hard to find, but this one has been a go to favorite of mine for some years. This recipe comes from my girl Tana who is known for her amazing summer fish cookouts and this one is her best-seller. I've converted my share of salmon-haters with this recipe and now I'm going to show you how to make salmon fillets that will impress! It has quite a few ingredients but trust me, it's worth the effort! It's spicy, tangy, sweet and delicious!! Although the orginal recipe calls for grilling, I've discovered that baking it in the oven works wonderful as well. I always have leftover sauce when the salmon is gone and I can't bring myself to throw it away so I save it and pour it over chicken breast, so yummy!


Spicy Carribean Honey Baked Salmon

Ingredients:

  • 1/2 c. honey
  • 1/4 c. soy sauce
  • 2. T. brown sugar
  • 2 T Pineapple juice (can also use orange/ apple juice)
  • 1 T. lemon juice
  • 1 T. distilled white vinegar
  • 1 t. Olive oil
  • 1/2 t. black pepper
  • 1/4 t. cayenne pepper
  • 1/4 t. paprika
  • 1/8 t. garlic powder
  • 2 Skinless, Salmon Fillets
  • Vegetable oil
  • Salt & pepper

Step 1.) First preheat the oven to 400. Now, in a saucepan add :

1/2 c. of honey.
1/4 c. soy sauce
2 T. brown sugar

2T. pineapple juice

1T. lemon juice

1T. white distilled vinegar

1 t. olive oil
1/2 t. ground black pepper

1/4 t. cayenne pepper
1/4t. paprika


1/8 t. garlic powder


Man that's a lot of spices!!!


Step 2.) Stir to combine all ingredients





Step 3.) When sauce comes to a boil, reduce heat and simmer for about 10 minutes.



Step 4.) Meanwhile, wash and pat dry 2 salmon fillets and place in a foil lined pan.


Step 5.) Rub each fillet lightly with vegetable oil until covered.


Step 6.) Sprinkle each fillet with some salt and pepper



Step 7.) When the sauce is done simmering pour onto the fillets.

Step 8.) Put into the oven for 12-14 minutes or until fish flakes easily with a fork


Step 9.) Remove from oven and flip fish over. Put back into the oven BUT BROIL it for 1-2 minutes.

Broil

Step 10.) Remove from oven. Place salmon in serving dish and spoon on some of that delicious sauce for dipping. Yummy!!!!
