CORN DOG MUFFINS FOR THE KIDS !!

My daughter came up with this very clever lunch idea and since many of you have little ones at home this summer, I thought I would share it with you. She has 4 children (ages 3 to 9) and she is always coming up with something fun for them to eat (she is a great cook). She told me that these corn dog muffins and a side-dish of fruit salad were a big hit with her little ones.
This recipe, starts with a box of Jiffy corn bread mix, some hot dogs and cheese.

Make the corn bread mix according to the package directions. Lightly grease a cupcake pan and put a couple spoonfuls of prepared muffin mix into each hole. Put 1/4 of a hot dog and a piece of your favorite cheese on top of the batter and top it with a little more batter. Bake as per the box instructions. That's it! What could be quicker?

What I think is great about this "recipe" is the endless possibilities! You can "fill" the muffins with little smokie's, or left over taco meat, or chili; just about anything would work.
