Courgette tartlets.



I've posted this a few times in variation, but it's a summertime standby for me. It hardly warrants a recipe, really, just roll out a sheet of puff pastry. Poke some holes in the center of it, top with sliced courgette, tomatoes, parmesan cheese, salt, pepper, and olive oil. Bake on the top rack at 400 (200 C) until deep golden. Sprinkle with fresh parsley, mint, or basil, or whatever you have on hand.
