March 3: Sweet and Sour Chicken

3 boneles, skinless chicken breasts
1 onion, chopped finely
1 red bell pepper, chopped
20 or so snap sugar peas
1/2 cup chopped carrot
1 tsp sesame oil
1 clove garlic

Saute above ingredients in a medium high wok until chicken is done and onions are translucent. Prepare the sweet and sour sauce as follow.


1 Tbs cornstarch
1/4 cup sugar
2 Tbs soy sauce
3 Tbs. ketchup
1/8 cup rice wine vinegar
1/8 cup red wine vinegar
1/2 cup chicken broth

Whisk together the sauce ingredients and add them to the stir fry mixture. Stir on medium heat until sauce thickens. Serve over rice.
