Eating Good Feeling Good: Olive Oil - Roundup

And here is the Roundup for the first EGFG Event. Thanks so much for your participation in the Eating Good Feeling Good: Olive Oil! I know I haven't been as involved as I should in the promotion of the event, and that's why there hasn't been much feed back. However, I think that all the dishes look really appealling for these Summer days. Let's use Olive oil in our diet!!!!


Tracey from the Wandering Pit has used Olive oil to dress this refreshing and healthy salad.

Her Goat's Cheese and Cranberry Salad is the kind of dish we crave for during these hot Summer days! She has mixed different kinds of lettuces and fruits and cheese to make it up

Notice that this is the first time she participates in a Food Event! Thanks so much Tracey and let the good weather stay with us so that we can enjoy awesome salads like yours!




Giz from Eqqual Opportunity Kitchen has used Olive oil when preparing this delicious chicken dish. Also perfect for summer days... you can have it ready in the fridge and if the weather is nice you can always take it for a picnic to the beach or the forest!

Giz claims that this Chicken stuffed with Asparagus, roasted red Peppers and brie has only 222 calories per serving! Another good reason to perform it in your own kitchen.

Valli from More than a Burnt Toast shows us how to be away from the kitchen heat and at the same time be able to prepare a delicious and simple dish!

Using sweet seasonal tomatoes and Goat Cheese croutons she has not only prepared a wonderful dish but also has painted her plate with the Canadian flag colours!

Try this Tomato Salad with Pickled shallots and Goat cheese croutons and dress it all up with Olive oil!

Valli from More than a Burnt Toast insists in her Olive oil use and sends another delicious recipe: Romesco with Grilled bread and Shrimps. Who wants a tapa? I would love one, please!

Preparing a Romesco sauce is always a bit laborious, but once you have it, place it in the fridge and use it in many other different dishes!

Vanessa from Sweet Artichoke has sent a daring and innovative Lemon Curd! She has used Olive oil instead of the traditional butter!

And I am proposing you this simple and traditional dish: Sardinas en Escabeche. Using this old method, you can preserve fresh sardines for some days in the fridge and present them in different ways after.

Prepare a sandwich with the sardines and some roasted red Peppers.

Or, present a salad with different lettuces, the sardines,  black olives and avocado.

Notice that always, always, always Olive oil is the main character!
