Amazing Apple Crisp

This is a recipe that my Mom gave me quite a few years back.  I modified it to suit a healthier diet.  It is delicious with low fat vanilla ice cream or frozen yogurt.  My favorite apples for baking are golden delicious, granny smith and rome.  I use whey low sugar substitute a lot in my baking.  I can't say enough about how much I love this stuff!!  Please stop by their website and check out their low-glycemic products.   There are other healthier sweetener options that I list below. I love the sucanat and raw turbinado sugar in this crisp, too.  It's better than using granulated white sugar and still very delicious!!  Enjoy~

Amazing Apple Crisp



Topping:
1 cup of whole oats or quick oats( I used both and they both turn out great)
1/2 cup whey low granular sugar substitute or use  1/4 cup sucanat and 1/4 cup raw turbinado sugar
1/3 cup whole wheat pastry flour or spelt flour
1/2 tsp sea salt
1/2 cup finely diced walnuts
1/4 cup safflower oil
3 tbsp softened best life butter (stick)
1 tsp cinnamon

Apple mixture:
6-7 large baking apples (rome, golden delicious or granny smith), peeled and sliced into small wedges
cinnamon for sprinkling ( 1 or more tsp)
raw turbinado sugar for sprinkling on apples (or whey low granular) about 1/4 cup

Directions:
Combine all topping ingredients into a mixer.  While mixing preheat oven to 350 degrees.  When combined your topping should be crumbly. Now peel and slice your apples and arrange in a  medium size baking dish.  A 13x9 would be fine.  Sprinkle generously with cinnamon(1 tsp or more to taste) and about 1/4 cup raw turbinado sugar or whey low granular. 


Top with your topping mixture and bake at 350 degrees for 45 minutes.  Let cool for about 15 minutes before serving.  This is how it looks going into the oven:
