My kid's favorite waffles

I love Saturday mornings.  Not only do we all get to sleep in, but we actually have time to enjoy a leisurely breakfast.  My kids love pancakes and waffles.  Here is a great waffle recipe that is from the Joy of Cooking cookbook.  You can make this really fun for the little ones by getting creative.  My kids love to decorate their food.  Getting your kids involved in the kitchen is one of the best ways to help create healthy eating habits.

Favorite Waffles



Recipe adapted from the Joy of Cooking cookbook.


Preheat a waffle iron.  Whisk together in a large bowl:
1 3/4 cups unbleached all purpose flour
1 tbsp baking powder
1 tbsp sugar(or whey low)
1/2 tsp sea salt


Thoroughly blend in another bowl:
3 eggs
1 stick smart balance blend butter
1 1/2 cups milk (I use 1%)


Make a well in the center of the dry ingredients and pour in the wet ingredients.  Combine with a few swift strokes with the whisk.  It should resemble thick muffin batter.  Do not over mix.  Most waffle irons will use about heaping 1/2 cup batter per waffle.  Cook until lightly brown.  Enjoy with real maple syrup, fresh fruit or sugar free syrup.
