Say Cheese Muffins
200g grated cheddar
1 1/2 cups flour
2 tsp baking powder
2 tsp sweet smoked paprika
1/2 tsp salt
1 1/2 tsp sugar
1 egg
1/2 cup plain yoghurt
3/4 cup milk
Preheat the oven to 210C and grease either a 12-hole mini muffin tin or about eight holes of a standard size muffin tin. Put the cheese in a large bowl and sift in the dry ingredients. Toss to combine. In another bowl, beat the egg, yoghurt and milk together. Pour this wet mixture into the dry ingredients and gently fold together until only just combined. Do not over mix! Spoon into the prepared tin and bake for 10 minutes, until the muffins spring back when pressed in the middle and are golden brown. Sit back and wait for the compliments to roll in.
