If you're in the mood for something sweet, there are a lot of easy sugar cookie recipes to choose from. But sugar cookies come in all sorts of different shapes and sizes. They can be as uncomplicated as drop cookies, a spoonful of dough dropped onto a cookie sheet, or as by comparison as determined cut-out cookies decorated with pretty, colorful icing.

The truth is, most easy sugar cookie recipes use the same basic list of ingredients, with maybe an added spice here or there. What it positively comes down to are the quantities of each ingredients, and how you treat the dough.

Each ingredient in a sugar cookie has a specific role, and tweaking its quantity will give you a slightly different cookie. So what goes in a sugar cookie?

Flour. Flour gives the cookie its structure. When you mix flour in liquids, it forms tough strands of gluten. The more you mix it, and the more flour you add, the tougher a cookie you get.
Butter. Butter doesn't just add flavor. It also helps the cookie stay more tender by preventing too much gluten from forming. It also lets the cookie spread out more.
Sugar. Sugar helps the cookies be more fluffy by trapping air inside the butter when you cream it. Also, if you don't cream it enough, the undissolved sugar will make the cookie spread out more.
Eggs. The yolks help make a more tender cookie, and the whites help give it structure. They also add some moisture.
Baking powder. Baking powder helps the cookie rise.
Baking soda. Baking soda makes the cookies brown faster, and makes the cookie more tender.
Vanilla. Vanilla is just there for flavor, but it positively does make all the difference.
Salt. Like vanilla, the salt is just there for flavor, although it can toughen the cookie, too.

But it's not just the ingredients that matter in easy sugar cookie recipes. How you deal with the dough will affect what kind of cookie you get.

The longer you cream the butter and sugar, the fluffier a cookie you'll get. It also won't spread as much, excellent to help cut out cookies keep their shape.

It is that time of year. The most joyous time of year. Christmas and all the decadence that comes with it! In my household Christmas also means cookies! My husband and I love to bake, and Christmas cookies make for the best baking around. One of the most popular Christmas cookies in existence is the gingerbread cookie.


Growing up, my mother was not much of a baker. I do not remember loads of cookies or fresh-baked bread to devour during the holidays. However, when I married my husband I took on his family's tradition of baking. On our first Christmas together, when we were still dating, my husband took me to his home where he was still living with his parents, for a day of Christmas baking. His mother did this every year and this year he invited me! I was so excited. It is truly a good and bad thing. Good because I love spending the time in the kitchen, but bad because of the extra calories. However, Christmas only comes once a year, so I believe calories shouldn't matter!

We started the day with making snowball cookies and then moved on to haystacks. After we completed those came the Christmas gingerbread cookies! We made the dough, rolled it out, and cut it into various shapes. We had: gingerbread men, gingerbread women, candy canes, Christmas trees, angels and more.

After we baked the cookies, came the fun part, decorating the cookies! With tubes of frosting, candy bits and more we decorated the cookies and had so much fun. That is the wonderful thing about Christmas gingerbread cookies, it really is the cookie that the whole family can help make. Children and kids love to help in the kitchen and I truly cannot think of a better way than decorating Christmas cookies.

Christmas gingerbread cookies recipes are readily available. I have seen some of my favorite chefs, Paula Deen and Ina Garten, make them on their Food Network Shows. If you look on the internet you can find thousands of these recipes readily available.

Since I first started that tradition years ago of making Christmas gingerbread cookies with my husband, I now look forward to it every year. We both relish in the opportunity to make cookies and decorate them together. It wouldn't be Christmas time without it. It has become almost important and fundamental as putting up the tree, wrapping the presents and driving around and looking at Christmas lights. Now that is saying a lot!

Celebrating the Sweetness of 2011!



As we all look forward to the beautiful potential of a new year, it's nice to pause and look back at 2011 to remember the work we've done, the goals attained, and the memories made.  Of course Glorious Treats is just one part of my life, but it is a very big part.  Baking, and creating beautiful things is my passion and I love being able to share my joy with you! 

Looking back, I'm realizing why this year went to fast... I was busy!  In addition to doing my best to take care of our home (with lots of help from my amazing husband), I've homeschooled my oldest daughter (2nd grade), and chased around my pre-schooler all the while! 

Early in the year I had the opportunity to attend a taping of the Oprah show (thanks Sharnel!!), and to close the year I fulfilled a longtime dream and was included in a segment on the Martha Stewart Show!  And along the way this year I made some wonderful new friends!  I met lots of wonderful bloggers at the Wilton Blogger's Workshop, then met in person many long time "Cookie friends" this past fall at Cookie Camp.

In between doing dishes, 2nd grade math and flying around the country, I made a lot of cupcakes... and cookies... and treats!  In fact, in 2011 I've posted the nice round number of 100 blog posts!

I think my oven must have been on for 600 hours this year!  And lets not even think about how many bags of powdered sugar I went through!

Herb Roasted Cauliflower with Shiitake Mushrooms Recipe

cauliflower and Brussels sproutsWhen I first discovered how creamy and smooth cauliflower became when puréed, I knew it had much more potential than I had given it credit for in my cauliflower-hating youth. Now, I can hardly get enough. The caramelized mushrooms and Brussels sprouts in this recipe are a wining combination, and roasting brings out the earthy taste of the cauliflower even more. Serve it with French lentils or wild rice for a warm and tasty winter meal.

Ingredients:
1 large head cauliflower
1 1/2 dozen Brussels sprouts
1/2 pound shiitake mushrooms
2 garlic cloves, peeled
1/4 cup fresh sage leaves (or 1 1/2 tbsp dried)
1/4 cup fresh oregano (or 1 1/2 tbsp dried)
2 tspn coarse sea salt
1/4 cup extra virgin olive oil

Preparation:
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Prepare cauliflower by removing and discarding outer leaves and inner stems. Cut florets into small pieces and place in a large mixing bowl. Prepare Brussels sprouts by cutting away and discarding dry ends. Halve sprouts and place in bowl with cauliflower. Remove stems from shiitake mushroom caps, slice caps into 1/4 inch strips and add to vegetables.
  3. With food processor running, drop in garlic cloves and process until minced. Add sage, oregano, salt, and oil and pulse briefly to chop herbs and blend ingredients. Remove from processor bowl and fold into vegetables to coat evenly. Transfer to a baking dish and roast 15 minutes. Remove from oven, toss to redistribute and prevent burning, and roast for an additional 15 - 20 minutes or until tender.
  4. Remove from oven and serve.
Tip: If Brussels sprouts are particularly large, you may want to cut them into quarters instead of halves.

TOP 10 COMFORT FOODS OF 2011

My mother used to say, the older she got the faster the years went by; now I know she was right !!  It seems like, just the other day, I was reminding myself to write 2011 on my checks; where did this year go ???

I noticed that several of my blogging buddies are celebrating the New Year by posting their favorite recipes of 2011.  Thinking that was a great idea, I looked back through my 101 posts for this year. Picking out the all time best ones was no easy task, so I decided to narrow it down to OUR TEN FAVORITE COMFORT FOOD RECIPES OF 2011.  I hope you enjoy them (click on their titles to see the recipes).


STARTING IN REVERSE:


This is a favorite of our grandchildren. Light as air and full of big air pockets that hold melted butter and jam, these are inexpensive, super easy and sure to please.


This is one of those busy day recipes that EVERYONE loves. The raw  noodles are cooked right in the sauce, so they are loaded with flavor. This one is a real keeper.




Glazed donuts are fun to make on the weekends. They put grocery store donuts to shame !!




You can make this pie a day or two ahead of time if necessary.
 It is a MUST for peanut butter lovers.




Some recipes are just for me. Picky-picky husband wouldn't even think of giving this recipe a taste (it has red peppers in it), but it is one of my all time favorites. IF you have any leftovers (which I seldom do with this recipe) it makes a wonderful lunch the next day.




5.  CLASSIC JELLY ROLL CAKE

If you want to impress your company, try this easy jelly roll recipe. It gives step by step instructions on how to roll the cake. It is delicious and oh so pretty.




This photo does not do this cake justice. It is super moist, rich and delicious warm or cold. Personally, we love it on the warm side (not hot) with a big scoop of vanilla ice cream. Your family will love this perfect ending to a family meal.

We have always enjoyed sloppy joes, so I decided to try and make an upscale version that I could serve to company; the result was fantastic. Everyone loves this recipe of lean chuck roast cooked in the crockpot with sloppy joe seasonings. It is comfort food at its best !!!




This unassuming little sponge cake is a true winner. It can be used for a zillion different recipes. It is light as air and makes the perfect shortcake.


The NUMBER ONE comfort food recipe of the year HAS to be this Mexican pulled pork and pinto beans (done in the crockpot); I serve it over rice.  Not only is it super easy, but it is ultra-flavorful and the leftovers make out of this world burritos !!!

Johnsonville Italian Meatballs

Ingredients
1 package Johnsonville® Mild Italian Sausage Links or Ground Sausage
1 egg, lightly beaten
1/3 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup milk
1/4 cup finely chopped onion
Directions
Preheat oven to 350 degrees F.
In a large bowl, combine the egg, bread crumbs, Parmesan cheese, milk and onion. Remove sausage from casings. Add sausage to the bread crumb mixture and mix well. Shape into 20 meatballs. Arrange meatballs on a shallow baking pan
Bake for 20 minutes or until meatballs are cooked through (160 degrees F). Serve with your favorite sauce and spaghetti.

Valentine Raspberry Chocolate Fudge Red Velvet Cake



Ingredients:

* 1 - 18 1/4 oz. box red velvet cake mix
* 1 - 3.9 oz. box instant chocolate fudge pudding and pie filling mix
* 1 1/4 cups water
* 1/2 cup crème de cocoa or raspberry liqueur or brandy
* 1/2 cup vegetable oil
* 4 jumbo or extra large eggs (at room temperature)
* 1 - 12 oz. jar seedless raspberry jam
* Vanilla Buttercream Frosting, 7-Minute Icing or Chocolate Fudge Frosting

Preparation:

Preheat oven to 350° F.

In a large bowl, combine cake mix, pudding mix, water, cup crème de cocoa or raspberry liqueur or brandy, and oil; add eggs and beat at medium speed of an electric mixer for 4 minutes, scraping down sides of bowl as necessary.

Fold in pecans. Spoon into two wax paper-lined greased 9-inch-wide heart shaped layer pans or one greased and floured 10-inch Bundt or tube pan. Bake for 30 to 35 minutes (heart-shaped layer pans) or 45 minutes (tube or Bundt pan), or until a wooden pick inserted into the cake layers or cake comes out clean.

Let cake or cake layers cool for 10 minutes in pan(s), top side up for tube cake and upside down for Bundt cake. Turn out onto wire rack(s) to finish cooling.

For heart-shape cake, arrange one layer on a cake serving plate. Evenly spread raspberry jam over cake layer. Top with second layer. Evenly spread top and sides with frosting of choice.

For tube or Bundt cake, spread frosting of choice over top and sides of cake. Sprinkle decorative confectioners' red sugar over cake as desired.
