Another Mary Berry brilliant recipe is for Chocolate and vanilla marble loaf. This moist swirl of a chocolate cake is a favorite in my family, however the new addition of topping the cake with chocolate & a swirl is a stroke of utter genius.
225g softened butter
225g caster sugar275g self raising flour
2 tsp baking powder
4 large eggs2 tsp milk
1/2 tsp good vanilla extract
1 1/2 level tbsp cocoa (green & blacks is s good choice)
2 tbsp hot water
25g butter
15g sifted cocoa powder
100g icing sugar25g white chocolate melted
heat the oven to 160 degrees, grease and line a 2lb loaf tin.
measure the butter, sugar, flour, baking powder, vanilla, eggs in a large bowl and beat with a handheld mixer for about 2 minutes, Spoon half the mixture into another bowl and set aside.
Mix the hot water and cocoa until it makes a smooth paste and allow to cool for a few minutes then mix in to one of the divided bowls.
Spoon the mixtures randomly into the waiting tin and smooth the top.
bake in the oven for 50 -60 minutes until springy to the touch. Allow to cool for a few minutes and then transfer to a wire rack to cool completely.
To make the icing, melt the butter in a small pan, add the cocoa and stir to blend and cook gently for 1 minute, stir in the milk and icing sugar, then remove from the hear and mix thoroughly. Leave to one side to thicken then spread the cold cake with the icing. The drizzle with the white chocolate.
