Oatmeal & Raisin Cookies


This afternoon, in a bid to cheer up my two children, who are still suffering from the Cold and sore throat I decided they could do some baking.

Looking through the cupboards a the oats and dried fruits that need a change from the energy bars that I usually make we set to work.

Following Rachel Allens recipe in her cookbook Bake

Ingredients

Makes 25-30 cookies

110g soft butter
110g caster sugar
110g soft brown sugar
1 egg
2tbsp water
1tsp vanilla extract
250g porridge oats
110g self raising flour
1/2 tsp salt
110g raisins
  • Cream the butter until light and fluffy and then add the sugars together with either a wooden spoon or electric whisk until light and fluffy.
  • Beat in the egg, water and vanilla & then stir in the oats, flour, salt and raisins until well combined & you have a thick dough .
  • Using your hands, roll the dough into walnut sized pieces and place onto a baking sheet, spaced out (No need to line it)
  • Bake at 180C for 15-20mins until light golden brown but still soft in the middle
  • Allow to cool for a few mins and then transfer to a wire rack then store in an airtight container.

They have turned out delicious, I managed to make 28 as three pairs of hands rolling the mixture into walnut sized pieces seemed to have reduced the volume of cookies somewhat (they are mightily sticky to make).

However both children happily had 2 each with a glass of milk before climbing into bed, content with the baking they had done.

Do try these, they are excellent as a mid afternoon pick me up, and excellent if you crumble one over yoghurt for a bit more crunch in the morning!
