Oh...the famous office potlucks, who has not had them? Two things are true about office potlucks: 1) people's best cooking skills are put on the table and 2) you are deemed to gain weight, even if on a diet.
A colleague of mine at work is known for his Banana Bread. Once we all knew that he was making it for this potluck, we all begged for a loaf for ourselves. The impressive thing is that Mr. Andrew Osborne, a creative person at heart with a great personality, not only delivered on his best creation yet, but also gave some of us our own loaf to take home.
And so, as I promised to Mr. Osborne, I am blogging about his lovely Banana Bread recipe. This post is for you Andrew, thank you for Cooking with Foodies Inc.!
The Banana Bread you see here, is not just any Banana Bread. In his quest to win the baking contest (which he certainly did), Andrew created an awesome dessert that caught the eyes, hums and "yums" of all of us. The presentation was exceptional. Being a motorcycle fanatic and a rock lover, he named this masterpiece the "Banana Nirvana Bread". Gotta give it to him, always being creative.
A piece of the loaf he gave me, looked like this...
And the recipe, goes something like this (makes one loaf):
- 1/3 cup of sour cream
- 1 teaspoon of baking soda
- 1/2 cup of butter (room temperature)
- 1 cup of sugar
- 2 eggs
- 1 cup of mashed ripe bananas (about 2)
- 2 cups of all-purpose flour
- 1/2 teaspoon of baking powder
- 1 cup of chocolate chips
Get the oven up to about 350F. Butter a 9x5-inch loaf pan. Combine
sour cream and baking soda in a bowl. Cream butter and sugar in a large
bowl. Beat in eggs, bananas and sour cream mixture. Sift in flour and baking
soda. Stir in chocolate chips. Spoon mixture into pan. Bake for one hour on
middle rack. Take it out of the oven, let it cool and enjoy!
