Parmesan Oven-Fried Chicken

This is a simple way to prepare oven-fried chicken.  Start with thin chicken breast cutlets.  They cook fast and are simple to prepare.   If you don't have thin cutlets, pound boneless, skinless chicken breasts (using a meat mallet) to about 1/4 inch thickness.

Ingredients:
1/2 cup grated parmesan cheese
1/4 cup whole wheat bread crumbs (such as 4C brand)
1/4 cup Ian's whole wheat panko bread crumbs
1/4 tsp salt
1/4 tsp pepper
1/2 tsp dried parsley
4-6 boneless, skinless thin cut chicken breasts
1/2 stick smart balance butter blend with olive oil

Preheat oven to 400 degrees.  Melt butter in the microwave for about 30 seconds or until completely melted.  Mix all dry ingredients together in a bowl.  One at a time, dip chicken breasts in melted butter and then coat with breading.  Place on a baking sheet covered with parchment paper.  Cook for 12 minutes on one side then turn and cook an additional 12-15 minutes  on the other.  Cooking time will vary depending on the thickness of the chicken breasts.  Serve with your favorite sides or top with marinara sauce and serve with pasta.  Delicious and fast~
