Wanting to make healthy and tasty meals for my family is one of the things that I find most enjoyable and getting the kids involved in helping me is a great way for them to learn.
My daughter is 5 years old and started school in September and my son is 4 and will be starting school in September. I find that times like this (half term) is such a great time when they can be together and we do as much as possible as a family, including in the kitchen.
Being the only non meat eater in the family (most meals involve 5 grown ups and 2 children) at first I thought it would be hard cooking meaty meals and not having them, but with a bit of tweeking (vegetable stock being my new best friend) I can eat similar meals without the meat and have extra vegetables and occasionally tofu.
Its Monday morning and so sitting with the children we decided to put together a menu of what dinners we will be having for the rest of the week, along with a shopping list so that we can hit the supermarket and get to work preparing as much in advance as possible.
Monday - Chicken Breasts in Mushroom Sauce with Crusty Bread
Tuesday - Shepherds Pie
Wednesday - Greek Lamb traybake
Thursday - Spaghetti & Meatballs
Friday - Tex Mex Burritos
Saturday - Stuffed jacket potatoes
Sunday - Hubbys birthday so eating out
We will also be doing some baking this half term week & the children have decided to make Marshmallow traybake squares, chocolate brownies & fairycakes with pretty toppings & will be giving these to friends and family throughout this half term week.
I shall also be making some nutritious soups for healthy lunches throughout the week & for my own meals will be eating the same as everyone with the exception of the meat which I shall be omitting or replacing with tofu.
In a bid to eat more healthy myself I shall also be cutting back on the carbs & using alternatives to starchy potatoes, bread and shall be doubling up on my portions of vegetables at each meal. I shall explain this in more detail along with each recipe blog post.
What an exciting food filled week. Off to the supermarket to pick up supplies and then I shall be setting to work on the Chicken with mushrooms and shepherds pie to make as much in advance as possible!
