Chicken Adobo: Filipino Recipe with a Delicious Blend of Sour, Salty and Spicy Flavors

Chicken adobo is a Filipino recipe served as a main dish. It is prepared with little sauce that is a blend of sour, salt, and spicy tastes and can be mixed with rice for a mouthwatering meal. This dish is commonly served on Filipino parties and other special events. However, it can be prepared for a meal on a typical day.

Some like their chicken adobo sour or salty; while others want it both sour and salty. But the most delicious adobo is a blend of sour, salty, and spicy flavors.

The ingredients you need to prepare a Filipino style chicken adobo are the following:
  • 3 to 4 lbs chicken
  • 1/2 cup vinegar
  • ¼ cup soy sauce
  • 1 to 2 bay leaves
  • 6 to 10 cloves crushed garlic
  • 1 tsp black pepper
  • 1 tsp chili powder
  • Salt
  • 2 tbsp cooking oil

To prepare this main dish, just follow these simple cooking instructions:

1. Cut the chicken into three to four inch pieces.

2. In a large pot, combine the chicken, vinegar, soy sauce, bay leaves, crushed garlic, black pepper, chili powder, and salt. (This is not require but it is ideal to leave this marinated for 30 minutes)

3. In medium heat, let it simmer for 30 minutes while stirring occasionally.

4. Add the 2 tbsp of cooking oil and stir frequently for 5 more minutes. You may add more pepper, salt, or chili powder to adjust the taste.

5. Transfer the cooked chicken adobo into a serving plate.

You can now smell the aroma of a deliciously prepared chicken adobo. It is best served with warm steamed rice.
