Twice Baked Cheesy Potatoes

My love of all things dug from the ground has impacted by family quite substantially, growing in the garden currently are all kinds of herbs, fruits, potatoes, recently we had carrots, cauliflower, leeks, onions & garlic. I wish we still had the allotment that we once started where growing our own vegetables was such a pleasure but working hours and family commitments put a stop to that sadly.

I have managed to get both children quite excited about stuffed jackets, my 4 year old son adds a cocktail stick with half a cheese slice to his and a cherry tomato to make potato pirate boats, where as my 5 year old daughter would rather make a smiley face with hers with cucumber, veggies and ham.

Dinner for tonight is already taken care of and so as the oven was on (making Brownies) I decided to throw in 2 packs of M&S baking potatoes (£1 for 4) and once they were cooked, the addition of mustard powder, onion powder, mixed herbs and some grated cheese, presto dinner was done for tomorrow.

It has even made enough so that I can put some in the freezer ready to heat up with some chicken, sausages or gammon steak for a no fuss dinner after school as they freeze fantastic.

Sometimes I will change the filling and add sauteed onion and a tin of cooked lean corned beef and mix this in with the hot potato - the crunchy topping on this is delightful.

Dinner is done for tomorrow night, a couple of chicken breasts wrapped in pancetta and roasted in the oven whilst these warm will be delicious with salad.
