Scrumptious Swiss Oats n' Fruit

This is a quick and healthy breakfast that is great for busy mornings!!  You throw everything together the night before and it's ready and waiting for you when you get up.  Super convenient for our busy lives!  I love to eat cold oatmeal in the summertime with all the delicious, ripe fruit in season.  My friend, Alison, brought this recipe to our brunch themed recipe club night in Ohio.  We had a group of neighbors, that loved to cook, that gathered once a month to host a themed meal and exchange recipes.  It was a lot of fun.  She got this recipe from  Zonya Foco's Lickety- Split Meals cookbook.  It's a lifesaver for me on mornings when I am running out the door.  This recipe serves 4, so feel free to downsize for a singe serving.  Enjoy~

Scrumptious Swiss Oats n' Fruit
(Serves 4)



Ingredients:
1 1/2 cups old-fashioned oats (you can also use quick cook oats)
1 1/4 cups skim milk, soy, or (my preference) almond milk
2 T honey (other delicious options are: 2 T grade A dark amber maple syrup,  1 -2 packets truvia, or 2 T agave nectar)
1/2 tsp ground cinnamon
3 cups any variety of fresh or dried fruit (strawberries, blueberries, blackberries, bananas, apples, cherries, kiwi, raspberries, etc.)
1/4 cup chopped walnuts, pecans or slivered almonds
*I also add a tbsp ground golden flaxseed and a dash sea salt

Night Before:
Stir oats, honey (or other sweetener), milk, nuts, flaxseed and cinnamon together in a large bowl and allow to soak in the refrigerator overnight, covered.

In the morning:
Add fruit and gently stir.
