Ingredients:
- 3 to 3 1/2 pounds chicken parts
- 1/4 cup vegetable oil
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 cup chopped celery
- 1/4 cup dry white wine or sherry
- 1 teaspoon rosemary
Preparation:
Coat chicken with cooking oil. Place in a heavy skillet; brown on all sides. Sprinkle with seasonings then add onion, garlic, celery, wine, and rosemary. Cover and let simmer for 25 to 30 minutes, until chicken is tender. Baste chicken with the sauce occasionally.Serves 4 to 6.
