Cherry & Coconut Loaf Cake

I was intending on making Nigella Lawson's Cherry & Almond Loaf this morning, but discovering that the Ground Almonds and the Almond Essence that were vital in the recipe were missing and I did not want to have to wait and go to the shops. Instead I picked up a packet of shredded coconut and as the idea of cherry with coconut in a cake sounded like a good idea I thought I would wing it and give it ago replacing the 100grams of ground almonds with coconut.

The recipe is so easy to make & the finished result is amazing!

Ingredients

  • 5 oz / 140g soft butter
  • 6 oz / 170g caster sugar
  • 6 oz / 170g self raising flour
  • 2 oz / 60g shredded coconut
  • 4 oz / 110g glace cherries
  • 2 eggs
  • a little milk (about 3 tablespoons)
Method

  • Cream butter and sugar until light and fluffy, then beat in eggs, one at a time.

  • Fold in flour, coconut and cherries (halved or quartered, as you prefer). Stir in the milk if mixture seems dry.

  • Bake in a loaf tin for 75 minutes at Gas 2 / 150ÂșC
