Sweet Potato Pinwheel Candy Recipe

Ingredients:
  • 1 medium potato, peeled and cooked
  • 1 teaspoon vanilla
  • 6 cups powdered sugar, sifted
  • 1 cup coconut, shredded
  • 1/2 cup creamy peanut butter
Direction:

  • Cut the potatoes into chunks and mash while adding vanilla.
  • Coconut a little at a time and add powdered sugar until mixture is thick and completely covered.
  • Two equal balls, wrap in cling wrap candy form, and refrigerate for an hour.
  • Sprinkle powdered sugar on a sheet of waxed paper and candy at a time out, a ball to roll, as an 8-inch square.
  • Note: a cup of water near room temperature where you are going to roll out the candy set. With a little practice you will find that you repair cracks, pieces can be added back in, they roll out the dough on your fingers wet and rub them.
  • Spread each square with peanut butter, covering entire surface.
  • Candy roll into a log like a jelly roll. Wrap each roll in waxed paper and cut to 2 hours or refrigerate until firm enough.
  • 1 / 2 inch slices and serve slice the logs. Store leftovers in an airtight container in the refrigerator.
