| • 500 g Baby Potatoes (boiled and peeled)• 2 inch Ginger (chopped)• 4 Tomatoes (chopped)• 4 tbsp Mustard Oil• 2 Green Cardamoms• 2 Dry Red Chilies• 2 Bay Leaves• 1 tsp Coriander Powder• 1 tsp Turmeric Powder• tsp Cumin Powder• A pinch of Asafoetida• Salt (to taste) |

| How to make Aaloor Dam: |
| • | Heat oil in a pan for 2 minutes. Fry the potatoes for a minute and keep aside. | | • | In the same oil, mix all the spices and saut for 2 minutes. | | • | Add tomatoes and fried potatoes. Stir and fry for 4 minutes on low flame. | |
