Banana Pancake with fresh kiwi fruit

I have been playing around with the "Tone it Up" chocolate pancake recipe that I posted last week.  I really love that recipe!  I made this version today and it turned out delicious, so I wanted to share.  This pancake is so quick and easy and I love that it makes a single serving.  This is a great post-workout breakfast.  The protein fills you up and helps to sculpt those sexy muscles.  Enjoy~

Banana Kiwi "Tone it Up" Pancake

 

Ingredients:
1 heaping scoop BSN Lean Dessert vanilla protein powder (or your favorite vanilla protein powder)
1/2 very ripe banana
2 egg whites
1/2 tsp vanilla extract
2 tsp ground golden flaxseed
1 packet truvia
1 tsp chia seeds
2 tsp oat flour
1 tbsp soy, almond or skim milk

In a medium size bowl, blend all ingredients together (except chia seeds) with a hand held mixer or stand mixer.  Fold in chia seeds.  Spray a frying pan with non-stick spray.  Cook pancake on medium heat for 4 minutes or until it starts to bubble and then flip to cook the other side.  Serve warm topped with fresh kiwi fruit or fruit topping of your choice (sliced banana, strawberries, raspberries, blueberries, etc.).  Drizzle with 1 tbsp agave nectar.  Brown rice syrup or real maple syrup are great here, too.
