Chorizo scrambled eggs


Now I admit that this is not the most beautiful of dishes, but the taste makes up for this in ways that I as a writer, struggle to find words for.

This is one of the simplest and tasty breakfasts that we have regularly in out house. I prefer mine without any accompanyments, however the rest of the family like this either rolled up in a soft flour tortilla or with a few slices of hot buttered toast.

  • 2 oz Spanish chorizo

  • 1teaspoon olive oil

  • 3 large eggs

Finely chop, then cook  the chorizo in 1 tsp of oil in a large frying pan over moderate heat, stirring, until browned, 4 to 5 minutes. Whisk eggs together in a bowl and stir into chorizo. Cook, stirring, until eggs are scrambled and just set, about 5 minutes. Serve immediately.
