Due to the popularity of roasted chicken, small or big restaurants offer this dish. You can buy it from anywhere. The good thing about this Filipino recipe is you can make a home-made version of it.
Here are the ingredients that you need for your delicious and roasted meal:
- 2 kilos dressed chicken
- 2 cups of lemon grass
- Salt and black powdered pepper
- 2 tbsp melted and unsalted butter
- 4 cloves crushed and peeled garlic
- 1 chopped onion
Cooking procedure:
1) Make sure the chicken is clean by removing any giblets and excess fat inside the chicken cavity.
2) Wash the inside and out of chicken under cold running water.
3) Season the chicken with salt and pepper. Make sure to also sprinkle the chicken cavity with salt and pepper.
4) Stuff the chicken cavity with the lemon grass, chopped onion and crushed garlic.
5) Brush the chicken with melted butter then season again with salt and pepper.
6) Pre-heat the oven at 400° Farenheit.
7) Roast the chicken for an hour or until golden brown. Use a rotisserie so the chicken does not touch the baking pan.
* Tip: Prick the chicken between the thigh and the body. If juice comes out instead of blood, it means the chicken is already fully cooked. Otherwise, it needs further roasting.
Once cooked, remove the chicken from the oven. You may also chop the chicken in large chunks to make eating more convenient. You can then enjoy a roasted chicken dinner the Filipino way!
