Chicken Ginger Stew: Warm Yourself with a Soupy Meal

Chicken ginger stew or Tinolang Manok in Filipino is known for its health benefits like boosting the immune system. It also aids in fighting off a cold virus. It’s the meal that I always want to eat whenever I have colds or fever as it helps relieve my illness.

Chicken ginger stew is also one of the favorite Filipino recipes during a cold weather. Its hot and tasty soup will surely warm you up. So, if it’s rainy or if you happen to have colds, this is the best meal for you.

Gather the following ingredients for this delicious meal:
  • 1 kilo chicken (sliced into pieces)
  • 1 cup moringa oleifera (malunggay) leaves
  • 1 chayote squash (sayote) or young papaya (cut into pieces)
  • Ginger (cut into stripes)
  • 3 cloves crushed garlic
  • 2 tbsp fish sauce (patis)
  • 5 pcs long green chili (you may add more if you want a more spicy chicken ginger stew)
  • Salt
  • Vetsin
  • 2 tbsp oil
  • 5 cups of water

Cooking Procedure:

1) Heat the oil in a stock pot then sauté the ginger and garlic cloves. Wait until the garlic cloves are golden brown.
2) Add the chicken to the pot and sauté as well for three to five minutes or until chicken gets oily.
3) Season the chicken with the fish sauce, salt, and vetsin.
4) Pour in the water and bring to a boil. Once it boils, lower the heat and let it simmer until the chicken is half-cooked.
5) Add the chayote or young papaya until the chicken and chayote become tender.
6) Add the malunggay and green chilis. Also correct the seasons by adding more seasonings.
7) Stir to properly combine all the ingrediengts.
8) Remove from heat but allow to stand for a few minutes to allow the vegetables to be cooked.

You can now transfer the chicken ginger stew to a serving dish and enjoy a soupy meal. Serve hot.
