The sweet, tangy taste of strawberry jam combined with the delightful fluffiness of butter cake gives an awesome mouth-watering treat in the form of the Strawberry Jam sandwich Cake.

This Strawberry Jam Sandwich Cake recipe uses simple butter cake as base. However, to add more of the taste we are after, we will use strawberry jam on the batter in substitute for a considerable portion of sugar for a more consistent strawberry flavor.
Strawberry Jam Sandwich Cake Recipe

Ingredients:
2 medium-sized eggs
1 cup cake flour
1 cup strawberry jam
1/4 cup confectioner's sugar
1/4 cup evaporated milk
1/4 cup butter
1/2 tsp vanilla essence
1/4 tsp baking soda

Procedure:
  • Preheat the oven at 180°C. Grease the baking tin with butter. Line it with wax paper. Be sure to grease the surface of the wax paper after laying it on the tin.
  • Sift cake flour and baking soda. Mix them well and set aside.
  • Slightly beat the strawberry jam for about 3 minutes or until it gets smooth. Add in confectioner's sugar, butter and vanilla essence. Beat them altogether until this strawberry batter gets a light consistency.
  • Add an egg at a time. Beating the batter well after each addition.
  • Alternately add about 3 heaping tablespoons of the cake flour and baking soda mixture into the strawberry batter with a portion of evaporated milk. Mix until the whole batter is smooth.
  • Transfer the whole batter into the greased baking tin. Bake it for another 20-25 minutes, still at 180°c.
  • Once baked, let the cake cool in the cooling rack. Once cool, run a clean string right across and into the cake. This an easy way to evenly divide the cake in half horizontally.
  • Apply copious amounts of strawberry jam on the upper surface of the lower half of the cake. This will save you time and the mess from applying jam on the lower surface of upper half of the cake. Put the upper half of the cake back in place.
  • Sprinkle a generous amount of confectioner's sugar on top of the cake. Put the cake in the fridge for about 10 minutes or until the jam holds the halves firmly.
  • Serve for snacks or dessert!
