Wicked Good Pork Tenderloin Chili (for the crockpot)

This is a great, healthy recipe for chili in the slow cooker.  I used a lean pork tenderloin and Trader Joe's Spicy Smokey Peach Salsa to make this black bean chili.  It's so delicious!! 

Black Bean and Pork Tenderloin Slow Cooker Chili

Ingredients:
1 3/4 lbs pork tenderloin, cut into 2 inch strips
1 small onion, coarsely chopped
1 small red pepper, chopped
1 small green pepper, chopped
3 (15oz) cans black beans, rinsed and drained
1 (12oz) jar salsa (Spicy, Smokey Peach Salsa recommended)
1 small can diced tomatoes and green chilis
1/2 cup organic chicken broth
1 tsp dried oregano
1 tsp ground cumin
2 tsp chili powder

Combine all ingredients in a slow cooker and cook on low for 8-10 hours.  Break up pieces of pork to thicken chili before serving. 

Trader Joe's Peach Salsa makes this dish "sing"
