The french pork and bean casserole recipe prep time: 25 minutes start to fi nish: 6 hours 55 minutes 5 servings (1 1⁄2 cups each)
Ingredients:
2 slices bacon, chopped
1 lb boneless countrystyle pork ribs, cut into
3⁄4-inch pieces
1⁄2 cup fi nely chopped onion
1 cup shredded carrots
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 teaspoon dried thyme leaves
1⁄2 teaspoon pepper
2 cans (15 to 16 oz each) great northern beans, drained
1⁄2 lb cooked kielbasa, cut into 1⁄2-inch pieces
Method:
1 In 10-inch skillet, cook bacon, pork pieces and onion over medium-high heat 8 to 10 minutes, stirring occasionally, until pork begins to brown.
2 Spray 3- to 4-quart slow cooker with cooking spray. In cooker, place pork mixture. Stir in remaining ingredients except beans and kielbasa. Layer beans over top.
3 Cover; cook on Low heat setting 6 to 7 hours.
4 Stir in kielbasa. Increase heat setting to High; cover and cook 30 minutes longer or until thoroughly heated.
Notes and Tips:
Kielbasa is a Polish pork sausage. Look for it near the other cooked sausages in the prepackaged meat section of the supermarket. If you like, turkey kielbasa can be used instead.
