When we think of cookies, our minds seem to automatically think of oatmeal cookies. For most of us, they have been a part of our lives since we were kids. And if we are going to indulge in cookies, why shouldn't we turn to the ones with the healthy ingredient of oatmeal? The Oatmeal Apple Cookies, in particular, are chocked full of healthy ingredients. You have apples, oats, and walnuts, all known for healthy nutritious properties. The following recipes will allow you to investment out of the commonplace and into a new realm of oatmeal cookies. Oatmeal Butterscotch Cookies
Oatmeal
3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 eggs
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
3 cups quick-cooking oats, uncooked
1 pkg (10-oz) butterscotch chips
Preheat oven to 375 degrees.
In a large mixing bowl, beat butter, granulated sugar and brown sugar until well blended. Add eggs and vanilla; blend thoroughly. Stir together the flour, baking soda, salt, and cinnamon; gently add to the butter compound beating until well blended. Stir in the oats and butterscotch chips; mix well. Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 375 degrees for 8 to 10 minutes or until golden brown. Cool slightly; remove from cookie sheets to wire racks. Cool completely.
Oatmeal Apple Cookies
3/4 cup butter-flavored shortening
1 1/4 cups firmly packed brown sugar
1 egg
1/4 cup milk
1 1/2 tsps vanilla
3 cups quick-cooking oats
1 cup all-purpose flour
1 1/4 tsps cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
1/2 tsp salt
1 cup peeled, diced apples
3/4 cup raisins, optional
3/4 cup walnut pieces, optional
Preheat oven to 375 degrees. Grease baking sheets and set aside.
Cream shortening, brown sugar, egg, milk and vanilla at medium speed of an electric mixer for 1 1/2 minutes. In a small bowl, concentrate flour, cinnamon, nutmeg, baking soda, and salt. Beat into the creamed compound with the mixer on low speed until well blended. Stir in the apples, raisins and nuts, if using. Stir in the oats. Drop the compound by rounded tablespoonfuls on the prepared baking sheets. Bake at 375 degrees for 13 minutes. Cool 2 minutes on the baking sheet. Then remove the cookies to a wire rack to desist cooling. Makes about 2 1/2 dozen cookies.
Yield: Apprx 4 dozen
