The day I was born, a heavy snow storm whitened Barcelona. That was many years ago, and yesterday for my birthday, the snow showed again to say hello! Like a cake covered with iced sugar... everything looked so beautiful and sweet... it felt like Christmas again :D. We adults behave like kids when we see snow here because it's such a rare thing to see near the seaside.
So, lets celebrate!!! I prepared these cute piglet cupcakes to share with my friends and family. I know it's such an American treat and tradition... but, who doesn't love cupcakes? They are fun to do, their appearance is cute and they are delicious to eat.
I fell in love with the pink pigs design and I had to have them done for my birthday.
If you like challenges, follow these simple rules like I did and get fantastic results. Use cake flour for the dough (it makes a difference), don't give up when the first one looks like anything else but a pig, make sure the surface where you knead the fondant is really clean (I also poured one drop of sunflower oil and spread it so that the fondant wouldn't stick to the counter).
Maybe hiding behind these cup they won't see me...
Ingredients for a 12 batch: 115 grs of cake flour, 1 teaspoon of baking power, 115 grs of butter, 115 grs of sugar, 1 teaspoon of vanilla sugar, 2 eggs and some strawberry marmalade.
For the piglets: 1 pack of pink fondant, a chocolate pen or black food colouring.
- Beat the softened butter together with the two kinds of sugar. Add the eggs one by one and beat until they incorporate the batter. Add the milk and the sifted flour and baking power.
- Preheat oven at 180ÂșC.
- Once you get an homogeneous dough, pour inside the paper cups and place in the oven's rack for 18 to 20 minutes (check your oven's instructions too).
- Meanwhile, extend the fondant on the kitchen counter with the roller and use different sizes of round discs to shape the body, face and nose of the piglet. Shape the tail and ears with your hands.
- When the muffins are cold, spread some marmalade on top and place the discs on place, the ears and tail and paint the eyes and mouth with the chocolate pencil. Then make the nose wholes with a toothpick.
- Let your kids, your family, your friends and neighbours play the big bad and hungry wolf!
