1/2 c strawberries
1/2 c blueberries
1 1/4 cup plain yogurt
1/2 tsp vanilla extract
3 tbsp splenda
2 tbsp fruit juice
Mint leaves, for garnish
Method;
- Gently mash berries together in a bowl ( do not use a processor as it will make the fruit too runny). In a seperate bowl, whip yogurt until smooth and creamy.
- In another small box, combine vanilla and splenda then add to whipped yogurt to taste (your preferrence).
- Fold in the mashed fruits and the juice.
- Serve garnished with whole berries and a mint leaf.
