Ingredients:
1/2 chicken
600g potatoes
1/2 onion
1/3 carrot
2 cloves shallot, grated
2 tsps curry powder
1/2 cup evaporated milk
Marinade:
pinch of pepper
1 tbsp light soy sauce
1 tsp cornflour
Seasoning:
1/2 tsp salt
1/2 tsp granulated sugar
1 1/2 cups water
Method:
- Wash. cut chicken into chunks and marinate.
- Peel and thickly slice potatoes. Skin and cut the onion into chunks.
- Peel, thickly slice and cook carrot in boiling water for 10 minutes.
- In the inner pot heat 2 tbsps of oil. Stir fry shallot and curry powder until fragrant. Put into chicken, onion and potatoes, and stir fry for a while. Add carrot and seasoning, bring to the boil and cook for 5 minutes. Transfer the inner pot to the outer one and cook for 45 minutes. Take out the inner pot, pour in evaporated milk and bring to boil again.
