Ingredients
Fresh Shallots/spring onions chopped finely
Grated carrot
Fresh coriander chopped up
Fresh grated ginger
Fresh grated garlic
Fresh mint shopped up
2 birds eye chillis chopped finely (leave out seeds, very hot- your eyes will water and your nose will run) or dried chilli flakes.
Tablespoon or 2 of your fav. oil
Chop or rip up some Asian green veges, bok choy etc.(optional)
Method:
- After draining soba/Japanese buckwheat noodles, add everything in with them and mix up good then eat.Very nice and refreshing.
