Green Bean Filling:
150g cooked split green beans sugar
80g sugar
150ml coconut milk
150ml fresh milk
10g instant jelly
2 tsp agar agar powder
Crystal Skin:
300ml coconut milk
10g sifted green bean flour
4 tsp agar agr powder
10g instant jelly
700ml water
200g sugar
2 tbsp strawberry jam
a few drops of red food colouring
Method:
Green Bean Filling:
- Blend all ingredients in blender till smooth. Pour mixture into saucepan, bring to boil then pour into tray (3x6 inch). When filling is cool, cut into pieces and set aside.
Crystal Skin:
- Mix coconut milk with green bean flour and stir till well blend. Set aside.
- Combine agar agar powder, instant jelly, water and sugar. Bring to boil, stir in coconut milk mixture (step 1) and bring to boil again. Stir in strawberry jam and red food colouring.
Method:
Fill and koo kueh moulds half-full with crystal skin mixture. Add 1 piece of filling then fill moulds to te brim with crystal skin mixture. Place moulds in refrigerator. Remove and koo kueh from moulds when set.
