Ingredients:
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp oregano
- 1/2 tsp thyme
- 1/2 tsp bay leaf
- 5 cloves garlic, minced and crushed
- 1 hot green chile, minced and crushed
- salt and pepper to taste
- In a mixing bowl, combine all ingredients and mix together.
- Lamb chops can be marinated 4 to 6 hours.
- Large cuts of lamb (i.e. leg of lamb) should be marinated overnight.
