Maki Sushi-Seasoned Vegetables
A nice maki sushi recipe to try !
INGREDIENTS
* Vegetables (see note), julienned, or cut into thin strips -- 1 cup
* Dashi stock -- 1 cup
* Soy sauce -- 2 tablespoons
* Sugar -- 1 1/2 tablespoons
* Mirin -- 1 1/2 tablespoons

1. Add all the ingredients to a small saucepan and bring to a simmer over low heat. Cook until the vegetables are just cooked through.
2. Remove from heat, cool, and squeeze to remove excess liquid.

* Suitable vegetables include bamboo shoots, carrot, celery, daikon, spinach (squeeze especially well), green beans, asparagus, snow peas. Use your imagination. The maki sushi recipe is ready to serve...enjoy the sushi !
