Kare-kare: The Filipino Recipe for all Special Philippine Occasions

Kare-kare is a Filipino main dish served during special occasions or especially fiestas in the region of Pampanga. Its rich peanut sauce makes its taste perfect. Mix your warm steamed rice with kare-kare sauce for a perfect mouthwatering meal. Having a kare-kare meal always give the “lutong-bahay” feeling.

For those who are healthy conscious, this main dish is still good for your health since its sauce is made with varieties of vegetables. The main meat used in this Filipino food is oxtail. However, you could also use goat meat or beef for this. This dish is also always served with shrimp paste. It is always much better if you sauté the shrimp paste.

If you’re already so excited to have a Kare-kare meal, here are the ingredients that you need.

Meat:
  •         ½ kilo beef or goat meat (cut into cubes)
  •          ½ kilo oxtail, cut in 2 inch pieces

Vegetables:

  •         4 pieces eggplant, sliced in 1 inch pieces
  •          1 bundle pechay (Chinese cabbage), cut into pieces
  •          1 bundle of sitaw (string beans), cut in 2 inch pieces
  •          Banana bud, cut in 1 inch pieces and blanched in boiling water (optional)

Spices:

  •          2 pieces diced onions
  •          2 heads of minced garlic

Other kare-kare ingredients:

  •          3 cups of peanut butter
  •          4 tbsp atsuete (annatto) oil
  •          ½ cup cooking oil
  •          8 cups of water
  •          Salt to taste

Five cooking instructions for kare-kare:

1) In a large pot, boil the oxtail and beef in water for an hour or until cooked and tender. Strain and keep the broth in the pot.

2) Heat the ½ cup oil and atsuete oil in a big pan. The atsuete or annatto oil will give the kare-kare a reddish color.

3) Sauté the garlic and onions until golden brown.

4) Add the broth, meat, oxtail and peanut butter. Bring to boil and let it simmer for 15 minutes. Add salt to taste.

5) Add the vegetables eggplant, Chinese cabbage, string beans, and banana bud. Cook the vegetables for 5 minutes and be careful not to overcook.

Remember, a kare-kare is always best eaten if served along with sautéed shrimp paste and steamed rice.
