After spending some time this morning updating my facebook Page,
Mandy The Cake Fairy : ) shared with me this amazing recipe for Banana Loaf.
After making it with my son this morning, I have to admit I was delighted with the results, even though we substituted dark brown sugar for the caster sugar (a trip to the shops was not on the agenda this morning) it turned out great.
2lb loaf tin, lined, oven at 160/140fan/gm3
75g dried apricots chopped
75g sultanas
1 lemon (Juice & Zest)
100g butter
125g caster sugar
2 large eggs
3 large ripe bananas
200g Self Raising flour
1/2 tsp cinnamon
1.Cream butter and sugar, add lemon zest
2. Mash bananas well, and add lemon juice
3. Add eggs one at a time to butter/sugar mix
4. Add dried fruit and banana/lemon mix
5. Stir through the flour, pour into loaf tin.
Takes about 50 mins to an hour
For a tropical version, use really good quality dessicated coconut instead of the dried fruit and a passion fruit in place of the lemon juice.
