- 4 cups Vegetable Stock
- 1 tbsp olive oil
- 1 medium onion , chopped
- 2 cloves of garlic (lehsun), crushed
- 1 small tin of baked beans
- 2 tomatoes, blanched and chopped
- 1/2 cup alphabet pasta or any small pasta
- few basil leaves, chopped
- 2 cups washed and roughly chopped spinach (palak)
Method:
In a pan heat olive oil, add onon and saute for 5 mins.
Add garlic and continue to saute.
Add stock, baked beans and tomatoes and brng almost to a boil.
Add pasta and simmer for 10 mins so that pasta cooks through. if to thick add 1/2 cup stock.
Just before serving add basil and spinach and cook just till the spinach is bright green and wilted.
Remove from heat and serve hot
