Chicken Curry Recipe: The Filipino Method

Chicken curry is originally an Indian recipe that has become a popular dish in South Asia. It’s popularity has also reached the Philippines. In fact, it has also become one of our favorite Filipino recipes and we also have our own special method of preparing it.

Chicken curry is best for people who want saucy foods. If you’re a foreigner who wants to taste this delicious recipe but can’t visit our country, don’t worry because you can easily prepare this main dish.
You just need to prepare the following ingredients:

Filipino recipes
  • 1 kilo chicken, cut into serving pieces
  • 3 medium-sized potatoes, peeled and quartered
  • 2 carrots, cut into peices
  • 1 thumb-sized ginger, chopped
  • 2 medium-sized onions, chopped
  • 1 garlic head, minced
  • 1 big red bell pepper, cut into “1x1” pieces
  • 1 big green bell pepper, cut into “1x1” pieces
  • 4 tbsp cooking oil
  • 3 tbsp curry powder
  • Salt and pepper to taste

1 tbsp chili poweder (Optional:This is only for people who love spicy foods)
2 cups coconut milk (Note: Most of us here in the Philippines use fresh coconut milk. We seldom use canned coconut milk. I have tried using canned coconut milk once and the taste is far different from the fresh coconut milk. I can taste the preservatives in the canned one. So I suggest that you use 2 cups of evaporated milk instead if you can’t get fresh coconut milk.)
Here is how you should prepare your chicken curry:
1) In a wok or frying pan, fry the potatoes and carrots. Set aside.
2) Fry the chicken in the same wok until golden brown. Set aside.
3) Sauté the garlic, onions, and ginger in a sauce pan for two minutes.
4) Add the chicken, coconut milk, curry powder, and chili poweder then simmer for 10 minutes.
5) While simmering, add the potatoes and carrots and wait for five more minutes or until tender.
6) Add both the red and green bell peppers. Also add the salt and pepper to taste.
In just six simple steps, your chicken curry is already prepared! Enjoy your meal.
