- 1 Brinjal
- 1/2 cup Cooked Peas
- 1 Tomato (finely chopped)
- 1 Onion (finely chopped)
- 1/2 tsp Garam Masala Powder
- 1/4 tsp Turmeric Powder
- 1-3 Green Chilli (chopped)
- 1/2 tsp Red Chilli Powder
- 3 tbsp Vegetable Oil
- Salt to taste
- Chopped Coriander Leaves
Stain it with oil on a medium flame, roast eggplant.
Get soft reverse the lower part. Keep rotating until it is properly roasted.
Remove from flame and plunged into a bowl containing cold water.
Heat oil in a frying pan or kadhai.
Onions and green peppers and fry over a medium flame until onions are golden brown.
Turmeric powder, garam masala, red chilli powder and add salt.
Fry for a minute, add spices and chopped tomatoes.
Cook until tomato is soft.
Now add peas and mashed eggplant.
Stir well over medium heat and fry for about 5 to 7 minutes.
Baigan Bharta is ready.
Serve it with chopped coriander leaves, garnished.
